National brownie day may happen each year on December 8, but there's no reason you can't make brownies pretty much any day of the year. Here's a surprisingly delicious brownie recipe featuring white miso paste as the star unusual ingredient!

Ingredients:

For the brownies:

8 oz dark chocolate (70%), chopped

1/2 cup unsalted butter

3 tbsp white miso paste

3/4 cup brown sugar

2 large eggs

1 tsp vanilla extract

1/2 cup all-purpose flour

1/4 cup cocoa powder

1/2 tsp salt


For the miso caramel swirl:

1/2 cup sugar

3 tbsp heavy cream

2 tbsp butter

1 tbsp white miso paste

Flaky sea salt for topping


Instructions:

Make the caramel: Heat sugar in a saucepan until amber. Whisk in cream, butter, and miso until smooth. Let cool.

Prepare brownies: Melt chocolate and butter together. Whisk in miso paste until smooth, then brown sugar, eggs, and vanilla.

Combine dry ingredients: Fold in flour, cocoa, and salt until just combined.

Assemble: Pour batter into lined 8x8 pan. Drop spoonfuls of miso caramel and swirl with a knife. Sprinkle with sea salt.

Bake: 325°F for 25-30 minutes until set but slightly fudgy.

The miso adds an incredible umami depth that enhances the chocolate while creating a sophisticated sweet-savory balance. The saltiness makes the chocolate taste even richer!
