What began as a happy accident in the 1950s has become one of the hot season's most satisfying treats.

The modern slush traces its origins to Omar Knedlik, a Dairy Queen owner in Kansas whose broken soda fountain accidentally created the first frozen carbonated beverage.

When customers couldn't get enough of these semi-frozen sodas, Knedlik knew he was onto something revolutionary. By 1960, he had invented the first slush machine, and the ICEE was born, launching a frozen empire that would eventually spawn everything from 7-Eleven Slurpees to movie theater classics.

While slushes were initially playgrounds of artificial flavors and neon colors, today's culinary landscape has embraced the sophisticated potential of this humble frozen drink. National Juice Slush Day, celebrated every May 20, now represents not just nostalgic childhood memories, but an opportunity to make slushes that taste like more than corn syrup and a melange of artificial flavors and colors.

Watermelon-Mint Sparkling Slush

Serves 4

Ingredients:

  • 4 cups fresh watermelon, cubed and frozen
  • 1/4 cup fresh mint leaves
  • 1/2 cup sparkling water or club soda
  • 2 tbsp lime juice
  • 1 tbsp agave nectar
  • 1/4 tsp sea salt
  • Fresh mint sprigs for garnish

Instructions:

  1. Blend frozen watermelon, mint leaves, sparkling water, lime juice and agave until slushy consistency forms
  2. Add salt and pulse briefly
  3. Serve immediately in chilled glasses, garnished with fresh mint sprigs

The mint's natural cooling properties amplify watermelon's refreshing qualities, while the sparkling water creates a light, effervescent texture. Lime juice adds brightness and a pinch of salt enhances the fruit's natural sweetness without overwhelming the delicate mint.
