Chocolate lovers, Tuesday is your day. That's because October 28th marks National Chocolate Day, a yearly celebration that gives us the perfect excuse to celebrate one of the world's most beloved treats. Whether you're a dark chocolate devotee, a milk chocolate maven or a white chocolate wonk, Tuesday is all about embracing the rich, sweet desert that has captivated taste buds for centuries.

While many will reach for a chocolate bar tomorrow in order to celebrate the day in its most basic form, for those of you looking to level up your chocolate celebration, how about making a show-stopping chocolate lava cake? These little masterpieces deliver everything you could want in a chocolate dessert: a perfectly baked exterior that gives way to a molten, gooey center that flows like magma across your spoon. The best part? You only need a handful of simple ingredients and about 20 minutes of your time.

Decadent Chocolate Lava Cakes

Ingredients:

4 oz dark chocolate (70% cocoa), chopped

4 tablespoons unsalted butter

2 large eggs

2 large egg yolks

1/4 cup granulated sugar

2 tablespoons all-purpose flour

Pinch of salt

Butter and cocoa powder for ramekins

Vanilla ice cream (for serving)

Fresh berries (optional)


Instructions:

Prep: Preheat oven to 425°F. Butter four 6-oz ramekins and dust with cocoa powder.

Melt chocolate: In a double boiler or microwave, melt chocolate and butter together until smooth. Let cool slightly.

Mix batter: Whisk eggs, egg yolks, and sugar until thick and pale. Fold in melted chocolate mixture, then gently fold in flour and salt.

Fill ramekins: Divide batter evenly among prepared ramekins.

Bake: 12-14 minutes until edges are firm but centers still jiggle slightly.

Serve: Let cool 1 minute, then run a knife around edges and invert onto plates. Serve immediately with vanilla ice cream!

Pro tip: These can be made ahead and refrigerated - just add 1-2 extra minutes to baking time.
